Mango And Coconut Wonton Parcels

  1. Heat oil in a deep fryer or a large saucepan over high heat to 180C.  
  2. Place mango, mint, sugar, coconut cream and lime zest in a small food processor. Process until smooth.  
  3. To assemble, place a spoonful of the mango mixture into a wonton wrapper. Brush edges with a little water. Join opposite corners together, to create a triangle. Press to seal. Repeat with remaining filling and wrappers.  
  4. Add parcels to oil in batches. Cook, turning occasionally, for about 4 minutes, or until wrapper is crisp and golden brown. Drain on absorbent kitchen paper.  
  5. Dust parcels with icing sugar. Serve with ice-cream. Decorate with mint.
