  1. Pour vegetable oil into a frying pan and heat to 180C or hot enough to deep-fry.
  2. Place the prawn meat into a small blender, add the spinach and coriander, blend to a paste consistency.
  3. Cut six 6cm circles from the pita bread. Spoon a heaped tablespoon of the prawn mixture on top of each pita round.
  4. Combine the breadcrumbs and coconut in a small bowl. Dip the prawn side into the crumbs to coat.
  5. Place the prawn toasts into the oil, prawn side first, cook for 2-3 minutes each side or until golden and cooked through.
  6. Combine mayonnaise, tabasco, and chili flakes into a small serving dish.
  7. Plate the prawn toasts with the dipping sauce to the side to serve.
